Cinnamon Roll Snack Cake with Cream Cheese Glaze
There’s something about August that feels like the world’s longest Sunday evening.
Summer isn’t quite over, but you can already feel it packing its bags. School is right around the corner. Calendars start filling up again. Somehow there are doctor’s appointments, back-to-school shopping, college prep, and seventeen little things that all need to happen immediately. Around here, it feels like life is running me instead of the other way around.
Tell me I’m not the only one.
Even with the kids in college, August still has me running around like I’m trying to herd caffeinated squirrels. Just when I think I’ve crossed something off my list, three more things pop up behind it.
Then, right in the middle of all the chaos, Ivy wandered into the kitchen with those big hopeful eyes and said, “Mommy…a cinnamon roll snack cake sounds really good.”
Well…
I probably should have said, “Maybe next week.”
Instead, I tied on my apron.
Because somehow baking has always been the thing that slows my spinning brain down. The laundry can wait another hour. The emails will still be there. But butter and sugar? They only ask that you show up.


Before long the mixer was humming, cinnamon was filling every corner of the house, and life suddenly didn’t feel quite so overwhelming anymore.
Funny how that works.
Now, technically this is more of a fall recipe. It has all those cozy cinnamon roll vibes that make you want to light a candle and wear fuzzy socks.
But August and autumn rhyme, so I’m calling it close enough.
Besides, nobody has ever complained about eating cinnamon cake in August.
This snack cake has everything I love about homemade cinnamon rolls without asking you to wait for dough to rise. It’s buttery, soft, packed with ribbons of cinnamon sugar, and finished with a pourable cream cheese glaze that settles into every little swirl.
It’s perfect with a hot cup of coffee on a slow Saturday morning.

Cinnamon Roll Snack Cake with Cream Cheese Glaze

Ingredients
For the Cake
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar, divided
- 4 large eggs, room temperature
- 1 tablespoon vanilla bean paste
- 3 cups all-purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1⅓ cups sour cream, room temperature
- 1 tablespoon ground cinnamon
For the Cream Cheese Glaze
- 4 ounces cream cheese, softened
- ½ cup powdered sugar
- ½ teaspoon vanilla bean paste
- 5 tablespoons whole milk, plus more if needed
- Pinch of salt
For Finishing
- Turbinado sugar
- Ground cinnamon
Instructions
Make the Cake
- Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper, leaving enough overhang on the sides to create a sling for easy removal.
- In the bowl of a stand mixer, cream together the softened butter, granulated sugar, and ⅓ cup of the brown sugar until light and fluffy, about 2–3 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla bean paste.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- With the mixer on low speed, add half of the flour mixture. Mix just until combined.
- Add all of the sour cream and mix until incorporated.
- Finish by adding the remaining flour mixture, mixing only until no dry streaks remain.
- In a small bowl, combine the remaining ⅔ cup brown sugar with the cinnamon.
- Spread half of the cake batter into the prepared pan.
- Sprinkle half of the cinnamon-sugar mixture evenly over the batter.
- Carefully spread the remaining batter over the top. Since the batter is thick, an offset spatula—or even the back of a spoon—works well.
- Sprinkle the remaining cinnamon-sugar mixture over the top.
- Using a butter knife, skewer, or thin spatula, gently swirl the cinnamon mixture throughout the batter using large figure-eight motions.
- Bake for 45 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
- Cool completely before glazing.
Make the Cream Cheese Glaze
- In a medium bowl, beat together the softened cream cheese, powdered sugar, vanilla bean paste, pinch of salt, and milk until smooth.
- Add additional milk, one tablespoon at a time if needed, until the glaze is thick but easily pourable.
- Pour the glaze evenly over the cooled cake.
- Finish with a light sprinkle of turbinado sugar and a dusting of cinnamon.
Notes
- Room temperature ingredients create the softest, most tender cake.
- Don’t overmix the batter once the flour is added.
- The glaze should be pourable rather than spreadable—it should slowly run across the cake and settle into the cinnamon swirls.
- Store covered at room temperature for up to 2 days or refrigerate for up to 5 days. Bring to room temperature before serving for the best texture.
