Dulce de Leche Brownies: A Little Fancy, a Lot of Chocolate, and Absolutely No Real Pants Required
There are some flavors that just belong together. Peanut butter and jelly. Coffee and a quiet morning. Fall and caramel.
Now, I’m fully aware that caramel isn’t exclusively a fall thing. I’m also fully aware that I would happily eat these brownies in the middle of July when it’s approximately a thousand degrees outside.
But if calling caramel a fall flavor gives me an excuse to make another batch of brownies, well, who am I to argue?
And these aren’t just any brownies, my friends.

These are rich, fudgy, deeply chocolatey brownies with beautiful ribbons of dulce de leche swirled through every layer. They’re sweet, a little gooey, and just fancy enough to make you feel like you’ve put some serious effort into dessert.
Spoiler alert: You haven’t.
Which is exactly how I like it.
First, Let’s Talk About Dulce de Leche
If you’ve never had dulce de leche, allow me to introduce you to one of my favorite little kitchen shortcuts.
Dulce de leche is sweetened milk that’s been slowly heated until it turns into this thick, golden, caramel-like deliciousness.
You can make it yourself by cooking sweetened condensed milk, but we’re not doing that today.
Nope.
We’re buying a jar or can of the already-made stuff and calling it a day.
I like to call it cheater’s caramel.
Technically, dulce de leche and traditional caramel aren’t quite the same thing. Caramel is made by heating sugar, while dulce de leche gets its gorgeous color and flavor from slowly cooking sweetened milk.

But they’re both sweet, golden, and absolutely wonderful with chocolate, so I’m not about to make a fuss.
When I told Ivy what I was putting into these brownies, she was a little skeptical.
But after one bite?
Let’s just say she wasn’t questioning my life choices anymore.
And really, isn’t that one of the great joys of baking? Watching someone take that first bite of something you made and seeing their whole opinion change?
Especially when that someone is your kid.
Brownies That Got a Little Swanky
Here’s the thing about these dulce de leche brownies.
They look like something you’d find in a cute little bakery with fancy coffee drinks and desserts displayed under glass.
Those gorgeous caramel-colored swirls against the dark chocolate brownie? Oh, they’re pretty.
And when you sprinkle a little flaky sea salt over the top?
Well, now we’re getting downright sophisticated.
It’s like regular brownies decided to get dressed up for a night out.
Meanwhile, I’m standing in my kitchen wearing sweatpants, probably with flour on my shirt, wondering if it’s too early for another cup of coffee.
Balance, my friends.
The beauty of this recipe is that you don’t need any fancy equipment or complicated techniques. We’re melting butter in the microwave, whisking everything together, and making pretty little swirls with a butter knife.
That’s it.
Fancy brownies. Regular kitchen. Questionable wardrobe.
I love it.

The Little Trick That Makes These Brownies Extra Special
Before we get to all that gorgeous dulce de leche, I want to talk about one small step that makes a big difference.
When you melt your butter with the sugars, you’re going to whisk everything together while it’s still warm.
Then you’ll add the cocoa powder and keep whisking for another minute and a half.
I know.
A whole minute and a half.
Your arm might have some opinions about this.
But there’s a reason we’re doing it.
Adding cocoa powder to the warm butter mixture helps bloom the cocoa, bringing out a deeper, richer chocolate flavor.
And working the warm butter and sugar together helps encourage that lovely, delicate, crinkly brownie top that makes homemade brownies look so irresistible.
It’s not a guaranteed ticket to a perfectly shiny crust every time, but it’s one of those little baking tricks that’s absolutely worth the extra whisking.
Besides, we’re about to eat brownies. A little arm workout seems fair.

The Secret Is in the Swirl
Now comes my favorite part.
We’re not just dumping the dulce de leche on top and hoping for the best.
We’re layering it.
First, spread half of your brownie batter into your parchment-lined pan. Then dollop half of the dulce de leche over the batter and gently swirl it around with a butter knife.
Nothing too dramatic here.
We’re making pretty little ribbons, not mixing everything into one big chocolate-caramel puddle.
Then add the rest of the brownie batter, followed by the remaining dulce de leche, and give it another gentle swirl.
The result is a brownie with pockets of creamy dulce de leche tucked throughout, plus those beautiful golden swirls across the top.
And don’t worry about making the swirls perfect.
Honestly, I think the slightly messy ones are prettier anyway.
The Hardest Part? Waiting.
I’m going to ask you to do something that feels completely unreasonable.
After these brownies come out of the oven, I want you to leave them alone for at least two hours.
I know. I KNOW.
Your kitchen smells like chocolate and caramel. There’s a pan of warm brownies sitting right there. And I’m telling you not to touch them.
The nerve.
But here’s why.
These brownies are fudgy, and that dulce de leche is soft and gooey when it’s warm. Giving everything time to cool allows the brownies to set up so you can cut them into beautiful little squares instead of a delicious chocolate landslide.
If you’re planning to serve these to company, the wait is worth it.
If you’re eating them straight from the pan with a fork while standing in your kitchen?
Well, I’m not here to judge your choices.
Just be careful because that dulce de leche can be very hot right out of the oven.

A Little Sea Salt Makes Everything Better
The flaky sea salt is technically optional.
But if you’re asking me?
I’d use it.
Just a little sprinkle over the cooled brownies adds a lovely contrast to all that sweet dulce de leche and rich chocolate.
It’s one of those tiny finishing touches that makes something feel extra special without adding any real work.
And that’s my favorite kind of fancy.

Fancy Enough for Company, Easy Enough for Tuesday
I love a dessert that can do both.
These brownies are absolutely pretty enough to serve after dinner with friends. Put them on a cute platter, make some coffee, and suddenly you’ve got yourself a lovely little dessert situation.
But they’re also easy enough to make on an ordinary afternoon when you’re craving something chocolatey and want to spend a little time in the kitchen.
And if entertaining means cleaning the house, clearing off the dining room table, and putting on actual pants?
Well.
We’re not doing that today, my friends.
But you absolutely can if you want to.
I’ll be cheering you on from the sidelines, wearing my sweatpants and dunking one of these bad boys into a cold glass of milk.
Because sometimes making an ordinary day feel special doesn’t require a dinner party, fancy dishes, or even a reason.
Sometimes it just takes a pan of homemade brownies.
And a little cheater’s caramel.
Dulce de Leche Brownies
Rich, fudgy chocolate brownies with beautiful swirls of creamy dulce de leche throughout. A little fancy, a lot delicious, and surprisingly easy to make.
Prep
15 min
Cook
30–35 min
Cooling
2 hours
Ingredients
½ cup unsalted butter
¾ cup granulated sugar
½ cup brown sugar, packed
¾ cup unsweetened cocoa powder
2 large eggs
½ teaspoon vanilla extract
¼ teaspoon kosher salt
½ teaspoon baking powder
½ cup all-purpose flour
½ cup dulce de leche, divided
Flaky sea salt, optional
Instructions
1. Prepare your pan. Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving a little overhang on the sides to make removing the brownies easier.
2. Melt the butter and sugars. Place the butter, granulated sugar, and brown sugar in a large microwave-safe bowl. Microwave until the butter is melted. Remove from the microwave and whisk for approximately 45 seconds to begin dissolving the sugars and slightly cooling the mixture.
3. Bloom the cocoa. Add the unsweetened cocoa powder and continue whisking for another 90 seconds. This helps deepen the chocolate flavor and encourages that lovely crinkly brownie top.
4. Add the eggs and vanilla. Add the eggs one at a time, whisking well after each addition until completely incorporated. Stir in the vanilla extract.
5. Combine the dry ingredients. In a separate bowl, whisk together the kosher salt, baking powder, and all-purpose flour.
6. Make the brownie batter. Add the dry ingredients to the chocolate mixture. Using a wooden spoon, gently stir just until no streaks of flour remain. Don’t overmix! We want fudgy brownies, not chocolate cake.
7. Create the first layer. Spread half of the brownie batter evenly into your prepared pan. Dollop ¼ cup of dulce de leche over the batter. Using a butter knife, gently swirl it through the chocolate, being careful not to completely combine the two.
8. Finish the swirls. Carefully spread the remaining brownie batter over the first layer. Dollop the remaining ¼ cup of dulce de leche over the top and gently swirl again.
9. Bake. Bake for 30–35 minutes, or until a toothpick inserted into a brownie portion near the center comes out with a few moist crumbs. Avoid testing directly through a pocket of dulce de leche.
10. Cool and serve. Remove the brownies from the oven and allow them to cool in the pan for at least 2 hours before slicing. Sprinkle with flaky sea salt, if desired, then cut into squares and enjoy!
Recipe Notes
- Don’t overmix: Once the flour goes in, gentle is the name of the game. Too much stirring can make your brownies tough.
- Use thick dulce de leche: Store-bought dulce de leche works beautifully. If it’s especially stiff, give it a quick stir before dolloping.
- For clean slices: Allow the brownies to cool completely, and wipe your knife between cuts.
- For extra chocolate contrast: A small sprinkle of flaky sea salt balances the sweetness of the dulce de leche.
- Storage: Keep brownies in an airtight container for approximately 3 days at room temperature, or refrigerate for up to 5 days.
